For example I use the theme Full Glass, which has a 'transparency level' option.
Whenever 'more transparent' is chosen, the start menu text defaults to black. No option seems to work that will change the text to white, other than changing transparency.
Is there a way to ensure text colours remain unchanged?

Choose Full Glass under skin option, underneath enable or disable 'less transparent', and check menu colour each time.
