Automate docs tables generation

Right now the process is to run the sheets-to-md script which generates the new tables and then upload those new tables to github.
We could just make the github workflow run this script and rerun the github workflow at the push of a button.

I tried to get a Github Pages page running off of my own fork with my own custom workflows, but failed. We need the ability to test github workflow changes in our own forks.
