Docs: Update Skin links to point to correct pages

Recently, the structure of the Skin website was updated. Previous deep links to components just take you to the Skin homepage.

We should update Skin links throughout our documentation to ensure they point to the right Skin pages.

Example:

• Previous URL: https://opensource.ebay.com/skin/#phone-input
• New URL: https://opensource.ebay.com/skin/component/phone-input/
