PROJECT: Make Opencast compatible with OpenSearch 3

1. Aim/description
Currently Opencast is only compatible with OpenSearch version 1 which reached EOL in 2025. The aim of this project is to make Opencast compatible with OpenSearch version 3.

Opencast currently uses the deprecated Java high-level REST client to interact with OpenSearch. Therefore, the second task will be to switch to the Java Client recommended by OpenSearch.
