test: cover HDF5 export and remaining DataExporter branches - #40

export_hdf5 was untested because h5py/numpy are optional and absent in CI. Exercise it against in-memory stand-ins injected via sys.modules (numeric vs string columns, missing keys, empty data, missing-h5py error, dispatch), plus timestamp prefix, output dir creation and CSV metadata toggles. exporter.py coverage 68% -> 100%.
