Summary

This PR removes the Gateway V1 implementation, API models and endpoints, command wiring, and now-unused networking dependencies while retaining Gateway V2 as the supported implementation.

• Deletes the legacy TURN/QUIC gateway and relay packages.
• Removes the bare gateway runner and legacy install, uninstall, and relay subcommands.
• Cleans the root and e2e Go module manifests.
• Leaves an upgrade hazard for systemd units created by the removed V1 installer.
