Dashboard needs real signal; tables need sorting, row editing and multi-filters; add user management #3

Follow-up on the first release (#2).

Expected behaviour once solved

Dashboard. Drop the "Good to see you" greeting. Out-of-stock and restocking are
useful; the rest is not. It should show the commercial picture — revenue, payments,
outstanding shipments and similar — so opening it answers "what is happening in the shop"
rather than "how many rows exist".

Tables. Rows clickable so a record can be edited without hunting for a button.
Sortable column headings.

Filtering. Several filters applicable at once, rather than one at a time.

Users. A section to delete accounts, promote a customer to administrator, and demote
an administrator back to a customer.

Verification

Drive the running application against the live API and Keycloak: confirm the greeting is
gone and the new figures are correct, confirm sorting toggles and is announced, confirm
two facets narrow a list together, confirm a row click opens the editor, and confirm
promote, demote and delete round-trip through Keycloak.
