Update the star history chart link to a working endpoint. The current chart is broken due to GitHub stargazer API restrictions, so this fix is necessary to keep the chart visible.

The star history chart in the README is currently broken because the endpoint it relies on stopped working due to GitHub stargazer API restrictions. This change points the chart to a working alternative that serves the same data without requiring an API token.
