I do want to leave 1 line of lyrics in with the notes, because it helps with learning how to sing and play at the same time

Honestly it's a point of preference depending on what you're trying to do.
I've certainly had songs where it was hard to figure out where the syllables lined up and spelling it out was helpful (Ben sings one of the Wellerman verses in a rhythmic way that I find off, and codifying it game me some satisfaction).

But most of the time... yeah you just want the words.

If the data was available for either, I'd implement a toggle to view based on preference.
