…ing-node

The Rust validator node is an alternative implementation to Cartesi's
rollups-node reference implementation; implementation diversity
strengthens the security of app validation. Rename the crate and its
lib import path accordingly.
Follow-up to the package rename: cargo -p selectors must match the
new crate name.

Follow-up to the package rename: cargo -p selector must match the
new crate name.
Follow-up to the package rename: the cargo -p selector, the compiled
binary, and the uploaded/released artifact names all tracked the old
cartesi-rollups-prt-node name.
Follow-up to the package rename: the e2e Dockerfile, preflight check,
and node spawn command (including its RUST_LOG module target) all
referenced the old cartesi-rollups-prt-node binary name.
Follow-up to the package rename: the node README's build/run
instructions and the architecture and test-harness docs still named
the old cartesi-rollups-prt-node binary.
