Removes vEUR (VNX Euro-pegged stablecoin) from the Celo stablecoin documentation. The vEUR row is deleted from the stablecoins token table in
build-with-local-stablecoin.mdx, and VEUR is dropped from the VNX corridor example inbuild-with-usat.mdx(nowVNX (VGBP, VCHF)). Sibling VNX tokens vGBP and vCHF are left intact.🤖 Generated with Claude Code
