[chore]: Gateway replica naming cleanup - #4156

- Switch from "gateway compute" to "gateway replica" everywhere in the codebase (class and function names, variables, log messages, etc). - Switch from "gateway" to "gateway replica" where this term is more precise semantically. This change does not affect public `dstack` APIs. Database tables and columns preserve their original names to avoid migration.
