This PR aims to overhaul docs by completely updating the content to go with the latest code version (which is very different from the original v0.1.x) and upgrading to Jupyter book 2.
Need to turn on the readthedocs automatic build for PRs, but can't do that until I have access to the RTD project...
edit: I have it now! Just removed the block from numerous failures when this package was not maintained!
This addresses #156.
