this PR fixes the map selection callbacks and synchronize the slider, dates, and echograms; improve map sizing, selection highlighting, and toolbars; add the Echopype EK500 colormap.

Refresh the notebook and app configuration to use the released MVBS example dataset, update documentation, and simplify .gitignore.
