chore(deps): upgrade vite-plus to 1.0.0

Upgrade vite-plus from 0.3.3 to 1.0.0 and align the Vitest packages at 5.0.1. The workspace keeps its existing Nuxt setup and connector packaging options.

Use the browser build of @vue/compiler-dom in the Nuxt test project. This prevents Vue Test Utils from mixing browser and Node compiler code during template compilation.

Update the pnpm catalog overrides and ignore .vitest/ artifacts. The test projects use Vitest 5 defaults.
