Clarify which rooms can be forwarded into a composition - #289

Say that only conference and audio-only rooms can be forwarded, and point readers who want to compose a single stream to publishing straight into an input. Add a short section on the two ways to get media into a composition, and move the inputs and outputs guide to the top of the compositions how-tos.

Description
Forwarding a livestream room into a composition fails, and the docs didn't say so or point to the simpler direct-input path early enough.
