Add Helix and Zed editor configs for kotlin-lsp

Summary

• Add .helix/languages.toml to run JetBrains' kotlin-lsp (--stdio) as the Kotlin language server in Helix.
• Add .zed/settings.json to use kotlin-lsp instead of the default kotlin-language-server in Zed.

Notes

• No app code is touched.
• kotlin-lsp must be on PATH. The first import of this Gradle project takes a few minutes.
• Only one kotlin-lsp instance can hold the workspace index lock at a time, so Helix and Zed cannot run it on this project simultaneously.
• Known upstream issue: completion items are sent with an empty textEdit.newText, so accepting a completion inserts nothing in Helix (Bug: Empty textEdit.newText in the response of the textDocument/completion method Kotlin/kotlin-lsp#105).

Test plan

• hx --health kotlin reports kotlin-lsp as configured
• Zed log shows kotlin-lsp starting with the configured binary
• Verify hover and completion after the Gradle import finishes
