Replace mailhog with mailpit

Because mailhog is basically abandonware - even though it works - it could be subject to security issues and we should be using something compatible, but well supported - mailpit has been pitched a couple of times as a replacement.

I will look into this in my free time.

This will be rolled out as a new pygmystack/mail image in a new release.
