The current star history chart is broken due to GitHub stargazer API restrictions. Switch the chart to the new domain to keep it working and update the link accordingly.

The star history chart in the README is currently broken because the GitHub stargazer API no longer works for it. This updates the chart to the new data source so it stays functional.
